Xian/Umami Taste


"Xianness/ Xian taste"[鲜:/∫æn/] is created by Chinese people thousands of years ago. It is composed of Chinese character “鱼”[fish] and “羊”[lamb] which expresses the pleasant and delicious taste brought by these two foods. Xian is equivalent to the Japanese concept of "Umami".

Xianness is imparted by numerous natural substances like nucleotides, amino acids, rich peptides, I+G, etc., which rounds off all tastes, balances off-notes while maintaining the flavor intensity of low salt products.
